Chicken and Dumplings are top notch even via a Dutch Oven!

There are some comfort foods that are part of the South and Chicken and Dumplings are near the top of the list! When we recently processed some birds the children asked for one of the birds to be used for Chicken and Dumplings.

It makes me happy to hear the request for Chicken and Dumplings as this shows that they are growing up right. It makes it even more special that they saw the babies hatch and helped take care of them until they were ready to be processed. The fact that they requested it means a lot to me.

By request let’s talk about the nuances of making Chicken and Dumplings in a dutch oven. As usual it functions very similar to the real thing however in this case it needs to be more like a stove top.

Chicken and Dumplings is the Sunday dinner in the South. Join in and make sure that you add a new way to cook it so that it does not leave your menu!
Ingredients
  • 1 package 24 oz. Anne’s Flat Dumpling Strips
  • 1 Whole Chicken
  • 4 Quarts water salted with 1½ teaspoons salt
  • Salt and pepper to taste
Instructions
  1. Bring Pot of water to boil with enough water to cover chicken.
  2. Cook until tender and remove when done.
  3. Bring the broth back to boil making sure you add enough water to have at
  4. least 4 quarts of liquid to cook a box of dumplings.
  5. Remove meat from bones and put aside.
  6. Remove the frozen dumplings from freezer while water is
  7. heating.
  8. Separate each layer of dumplings as needed and drop 8-10 in
  9. boiling broth stirring under as added.
  10. As broth comes back to a boil, add more dumplings, stirring after each addition until all are in boiling broth.
  11. Cook at a full boil about 10-12 minutes or until desired tenderness
  12. Add cooked chicken and boil 2 more minutes.
  13. Check to see if more salt is needed and add pepper as desired.
  14. Remove from heat, cover and wait 20-30 minutes before serving.

Obviously there is some difference between the stove top and a dutch oven but not as much as you think. The key is regulating the heat. I would recommend you use a good coal bed. The key is to get the water boiling and that can certainly be done with a hot bed of coals.

No matter if you are cooking on the Stove Top or dutch oven I am betting that Chicken and Dumplings will be a great comfort meal for you.
