Fiesta TexMex Chicken Pasta

A colorful dish that combines pasta and TexMex. It is a unique twist on the normal table fare that is guaranteed to please your palette.

- 2 cups pasta
- 2 Tablespoon butter
- 1 Cup milk
- 4 ounces Cream Cheese
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon chili powder
- 1 pint canned chicken precooked(6 -12 ounces)
- 1 pint canned black beans drained (15 ounce)
- 1 can corn drained
- 1 can diced tomatoes drained
- 2 cups Monterrey Jack cheese shredded
Preheat oven to 350°
When water is boiling in pot add pasta. Cook to al dente and drain
Melt butter in sauce pan
Add milk and cream cheese and saute over medium heat for 3 minutes
Add cumin, coriander, and chili powder and stir for 1 minute
Add chicken, beans, corn, and tomatoes and mix thoroughly.
Put pasta in oven proof dish and mix chicken mixture into it
Put dish in oven for 15 minutes
Add cheese to top and put back in oven for 5 minutes or until cheese is melted.
