There are times when you want to use some pasta with TexMex. You know pasta is not just for Italian any more. This is a fun little dish that will literally spice up dinner time.
It really stands out with black beans, but I need to can some more beans so I am using pintos lately.
Fiesta TexMex Chicken Pasta

A colorful dish that combines pasta and TexMex. It is a unique twist on the normal table fare that is guaranteed to please your palette.
Ingredients
- 2 cups pasta
- 2 Tablespoon butter
- 1 Cup milk
- 4 ounces Cream Cheese
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon chili powder
- 1 pint canned chicken (precooked)(6 -12 ounces)
- 1 pint canned black beans (drained) (15 ounce)
- 1 can corn (drained)
- 1 can diced tomatoes (drained)
- 2 cups Monterrey Jack cheese shredded
Instructions
- Preheat oven to 350°
- When water is boiling in pot add pasta. Cook to al dente and drain
- Melt butter in sauce pan
- Add milk and cream cheese and saute over medium heat for 3 minutes
- Add cumin, coriander, and chili powder and stir for 1 minute
- Add chicken, beans, corn, and tomatoes and mix thoroughly.
- Put pasta in oven proof dish and mix chicken mixture into it
- Put dish in oven for 15 minutes
- Add cheese to top and put back in oven for 5 minutes or until cheese is melted.
We like to have this at least once a month. The ability to pull some home canned stuff from the pantry and quickly make a meal is invaluable. There are 3 good reasons we started canning. I might have to go back and add another reason because it sure can make fixing dinner easy when most of the work is already done.
